I’m a firm believer and lover of the three main food groups: pizza, pasta and pancakes. I could quite happily just rotate the three for each meal for the rest of my life. I just feel like when a day starts with a serving of pancakes then it’s going to be a good one, which is basically my justification for rustling up this recipe literally every AM for the past month. It might seem time-heavy to have pancakes in the morning, but I can make these up in around 10 minutes. Not only do they taste amazing, but they pack a punch in the protein department too (about 35g with the ingredients I use) – awesome – and travel pretty well if you prefer eating at your desk.

PEANUT PROTEIN PANCAKES (serves one): The breakfast that feels kinda naughty, but actually packs in a serious amount of protein and gets you raring to go for the day ahead. Top with whatever you fancy – yoghurt, fruit or my personal favourite, a drizzle of Maple Syrup

You will need: 25g Oats (you can go gluten-free if you fancy), 50ml of Egg Whites (I go for the Two Chicks variety for convenience, or just throw a whole egg in), 2 Tablespoons Almond Milk (or whatever milk you fancy), 35g Protein Plus Peanut Flour (I get mine from Amazon, it’s not cheap, but the bag is MASSIVE), 1 Capful of Vanilla Extract

Optional toppings: Plain Yoghurt (I like the Aria Skyr variety and tend to use about 100g – it ups the protein!), Frozen Berries (I use about half a cup), Maple Syrup (I get mine from Amazon and use about a Tablespoon)

If you don’t fancy weighing all the pancake ingredients a 1/4 cup measuring cup is perfect to get the right amounts of the oats, egg whites and peanut flour if you’re feeling lazy. Turn on the heat under a non-stick pan (non-stick = no need for oil), then throw all your pancake ingredients into a bowl and mix. Then pour half of the mixture into the pan and cook for a couple of minutes on each side until cooked through. Repeat with the rest of the mixture. In the meantime prepare your toppings by adding some yogurt into a bowl and mixing in the maple syrup and heating up your berries for around a minute in the microwave to make a sauce (it’s seriously yum). Serve with your pancakes and you’re ready to dig in.

    Yum! I love making protein pancakes/waffles. Have them every day! Just as an annoying FYI (bear with me), oats ARE gluten-free. The only reason to buy them in a package that states them being gluten-free is if you’re celiac and don’t want to risk cross-contamination. :)
